French Toast, with a Twist

 
 
You will need:

Eggs (2-3)
Bread
Butter
Syrup
Bananas
Powdered Sugar

Very simple breakfast to make... if you ever roll out of bed to cook it :P

 
Step 1: Scramble the eggs in a container large enough for your bread to lay flat. Soak a few slices in the eggs, both top and bottom!

Step 2: Lay slices flat on a medium-heat skillet and toast both sides, but not TOO much or it'll taste like rubber

Step 3: Toppers: For the family, I sliced a banana, sprinkled a lil' powdered sugar, and garnished with a piece of orange I will never eat :)

Italian Crumb Catfish



You will need:
Catfish Filet
Tbsp of Extra Virgin Olive Oil
Perfect Pinch Lemon Herb
Weber: Chicago Steak Seasoning
Italian Bread Crumbs
1 cup of Jasmine Rice
1 Egg, Cucumber, Tomato
Mixed Greens
 
 
 
Step 1: Preheat the oven to 325 degrees and cover the baking dish with some tin foil. Then add the tablespoon of olive oil to grease the foil, as well as the catfish. This will keep the fish from sticking in the heat, and also keep the bread crumbs and spices in tact.
 
Step 2: Mix the bread cumbs with the lemon herb and chicago seasoning using small amounts of each. Dip the oiled catfish and cover both sides. Throw it in the oven for about 15-20 min.
 
Step 3: Start the boiling water for the jasmine rice and follow the instruction on the bag ;) Just make sure to occasionally add small amounts of water throughout the process because the bag won't tell you to, but it gives the best results.
 
Step 4: Boil your egg(s) for the salad because that's my favorite part and a salad sucks without boiled eggs. While everything else is cooking/baking, mixed the salad and chop the tomato/cucumber.
 
That is really all you have to do for this meal, very quick and simple > which is definitely my style :)

Sprite Cupcakes


I saw this on Pinterest and I had to make it to believe it!!

You only need:
A box of Fun Fetti cake
10oz can of (diet) sprite

**Do not use the entire 12oz can in mixture**
Stir and bake in the oven at 400 degrees for about 15 minutes
Easiest, tastiest dessert I've baked!
Very low in calories and you won't need eggs and oil!

Tuscan Pizza




 You will need:
Tomatoes
White sauce
Spinach
Feta Cheese
Pita/Flatbread
Diced grilled chicken

The white sauce:
sprinkle of pepper
sprinkle of salt
1/2 cup parmigiano-reggiano shredded cheese
1 minced garlic clove or
Powdered garlic is easier :)
1 cup of milk
2 tblspoons of butter
2 tblspoons of minced basil or
sprinkles of basil spice
3 tblspoons of flour

Directions for sauce:
Heat butter in a small saucepan.
Add flour and stir thoroughly.
Whisk in milk, adding slowly.
Stir in remaining ingredients.
Will thicken upon standing.


Preheat oven at 400°F

After you spread the white sauce on your flatbread,
add your base layer of feta cheese, working from the center > outward.
Next, add the (already grilled) chicken pieces, center > outward.
Add the (barely sauteed) spinach and tomatoes, and top with final layer of feta.

Bake 10-15 minutes

Remember to keep watch on the pizza and the time because oven temperatures vary.
I used a toaster oven and it cooked rather quickly :) 
My parents have an ancient oven and it would take 10 more minutes to get the same result.

Summer BlueBerry Lemonade

Treat Your TasteBuds!


This is a very simple and inexpensive cocktail for a hot summer day!

I stopped at Sideburns Bar and ABC Store for a refreshing afternoon cocktail. I decided on a flavored vodka and a pink lemonade blend. Mix about half-n-half in a cocktail glass. I grabbed the pink lemonade from Dollar General. I used the cap of the lemonade container to measure the lemonade powder, and then I put a few spoonfulls of sugar in the cap, moistened the rims of our glasses and coated the edges with a sweet treat.

Simple Snack for Summer


Quick and Simple:

Step 1: Take two slices of bread and de-crust the edges.

Step 2. Place them side-by-side and overlap them a small bit. Use a rolling pin and flattened the bread as much as you can, vertical and horizontal.
Step 3: Spread peanut butter over the flattened bread.

Step 4: Put banana on the peanut butter - as straight as you can make it

Step 5: Roll it up and slice it for "sushi" pieces.

For a healthier version, use whole wheat bread; it's also easier to roll.


 
Artistic food project, delicious snack for two, and healthy with vitamins and protein ;)

Loaded Potato Soup







You will need:
Bag of potatoes
Steam bag of broccoli
Shredded cheese
Chicken Broth (1 can)
Bacon bits
Sour cream
Potatoe masher

Step 1: Boil a pot full of chopped up potatoes over HI heat (5-6 red potatoes, 12-15 minutes)

Step 2: Boil broccoli on LO heat (small bag, 5-8 minutes)

Step 3: Drain the potatoes and then add the can of chicken broth to mash the potatoes.

Step 4: Add shredded cheese, bacon bits and cooked broccoli mixed into the potatoes.
(Splash of milk is optional, sometimes necessary)

 
LOADED POTATO SOUP!
20 Minutes Max, prep-time included.

Crub-Stuffed Salmon Pinwheel, Grilled Steak & Steamed Asparagus


You will need:
Stalks of Asparagus
Steak (This is Top Round Loin)
Publix Pre-Made Salmon Pinwheel
(No... I didn't spin this myself :)
Butter/Margarine
Dale's Steak Seasoning: Liquid (Reduced Sodium)
Weber: Chicago Steak Seasoning: Rub
GRILL & CHARCOAL





Step 1: Marinade the steak in a tupperware container. You should stab a few holes in the meat to let the marinade soak in. Pour about 1 cup (maybe 2) of Dale's sauce over the steak. Shake it up. Sprinkle the Chicago Seasoning on each side. Rotate the container upside down every couple of minutes for about 30-45 minutes altogether.

Step 2: Go ahead and get the charcoals burning in the grill. I used a tiny grill, so my coals didn't take longer than about 10 minutes to get ready. Remember to keep rotating your marinade as you check the coals at the grill and start the other foods.

Step 3: Pre-heat the oven to 375 degrees and spray a pan down with Pam, or grease it with butter. Throw the salmon in there and check on it from time to time. Flip it in about 15 minutes. The pinwheel should be ready in about 25 minutes altogether

Step 4: Go put the steak on the grill - once the coals are burnt and ready. Everyone cooks their steaks different, I like medium-rare in most cases. I grilled mine about 4-5 minutes on one side. Being a thin steak already, I only grilled it about 2 minutes on the flipside.

Step 5: While your salmon is in the oven, your steak is on the grill, begin chopping the aspargus at the tips - and then again in halves. Use a saucepan with a small amount of water at the bottom. Sauté it on HI for only about 3 minutes. Quickly be sure to drain the water after that short cook-time so the greens stay crisp. Sprinkle a little garlic powder on top, shake it around, and it'll taste great.

Step 6: Turn off the oven because the salmon is finished.

Step 7: RUN outside and grab that steak before you burn both sides.

Step 8: Pour your second glass of red wine that pairs amazing with this meal.
(The first glass was finished during prep-time.)


Dessert is always optional. I made a brownie mix at the bottom. I topped it with cookie dough and let them bake together. 25-30 minutes, Yum :)
